The ingredients that make up the base of Indian cuisine are rice, whole-wheat flour, and a number of different pulses (lentils, pigeon peas, black and green grams). One common and well-liked aspect of Asian cuisine are their curries. A curry, which is the general description of spicy dishes from this and nearby regions, is usually fried in vegetable oil. Indian cuisine features a wide range of different spices: chili pepper, black mustard seed, cumin, ginger, garlic, fenugreek, turmeric and others. Curry leaves are also a staple of Indian food. Northern Indian food has a higher focus on dairy products, and features unique flatbreads. Eastern Indian cuisine is loved for its luxurious desserts. In Southern India, rice is the primary grain on which many dishes are based.
